Easy Weeknight Dinners for Busy Families

I’ve been there (every single night!).

That’s why I’ve gathered a few family favorites that are quick to make, cozy to eat, and don’t leave a mountain of dishes behind.
These recipes are wholesome, simple, and perfect for busy parents who still want that “home-cooked meal” feeling — even on a Wednesday night.

Here are three easy weeknight dinners that save time and fill tummies — all tried and loved in our little Dutch-Moroccan kitchen.

1. One-Pan Moroccan Chicken & Veggie Traybake

A colorful, flavorful dinner that looks impressive but takes minimal effort. Everything roasts on one tray — the kind of meal that makes your home smell amazing and your evening feel calm again.

Ingredients

  • 4 chicken thighs or breasts
  • 1 zucchini (courgette), sliced
  • 1 red bell pepper, sliced
  • 1 red onion, cut into wedges
  • 2 carrots, sliced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp honey
  • Salt & pepper to taste
  • Fresh parsley + lemon wedges for serving

Directions

  1. Preheat your oven to 200°C (400°F).
  2. Place the chicken and veggies on a large baking tray.
  3. Drizzle with olive oil, honey, paprika, cumin, salt, and pepper. Toss everything together.
  4. Roast for 25–30 minutes, stirring halfway through, until the chicken is golden and the veggies are tender.
  5. Sprinkle with parsley, squeeze some lemon juice over the top, and serve with couscous or rice.

Tip: The honey caramelizes beautifully in the oven — making the veggies sweet and irresistible for little ones.

2. Creamy Dutch-Style Pasta with Spinach & Gouda

Comfort food meets simplicity. This creamy, cheesy pasta is a lifesaver on nights when you need something filling, fast, and toddler-approved. The melted Gouda gives it that signature Dutch warmth.

Ingredients

  • 250 g (9 oz) pasta (penne or fusilli)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 200 ml cream (or crème fraîche)
  • 100 g grated Gouda cheese
  • Olive oil
  • Salt & pepper
  • Optional: cooked chicken or mushrooms for extra protein

Directions

  1. Cook the pasta according to package instructions.
  2. In a large pan, heat olive oil and sauté the onion and garlic until soft.
  3. Add the spinach and cook until wilted.
  4. Stir in the cream and grated Gouda, letting it melt into a smooth sauce.
  5. Toss in the pasta, season with salt and pepper, and serve warm.

Tip: Garnish with extra cheese and a sprinkle of black pepper for that cozy “weeknight comfort” feel.

3. Chicken & Veggie Wraps with Yogurt-Mint Sauce

A fun, hands-on dinner that everyone loves — kids included. These wraps are light, colorful, and full of fresh flavor.

Ingredients

For the Chicken:

  • 2 chicken breasts, sliced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & pepper

For the Yogurt-Mint Sauce:

  • ½ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp dried mint (or fresh, chopped)
  • Pinch of salt

Extras:

  • Tortilla wraps
  • Lettuce, tomato, cucumber, and grated carrot

Directions

  1. Sauté the chicken in olive oil with the spices until cooked through.
  2. Mix all yogurt sauce ingredients in a small bowl.
  3. Fill each wrap with chicken, fresh veggies, and a drizzle of sauce.
  4. Roll, slice in half, and serve with salad or sweet potato fries.

Tip: Set up all the ingredients and let your toddler “build” their own wrap — it turns dinner into an activity!
